Rooibos Tea is a naturally caffeine-free tea made from the Rooibos shrub, Aspalathus linearis, which grows exclusively on the Cedarberg Mountains of South africa.  Needing no irrigation nor fertilization, the plants are harvested by cutting the green, needle-like leaves which are then left to dry in the hot African sun.  They turn a beautiful mahogany red color, thus giving the name REDBUSH.   Annique uses only the top fresh young tips for the finest quality tea.

HISTORY  OF ROOIBOS TEA  AND  ANNIQUE  PRODUCTS

For centuries, Rooibos tea was consumed by the Khoisan tribe of South Africa, who used it as a herbal medicine.  In the 18th century, botanists reported its use as a beverage.  Generations of South Africans started to enjoy its distinctive sweet taste, as yet unaware of its natural powers and the wide spectrum of its applications.  

In 1968, Annique Theron stumbled across the plant's natural healting properties and effectiveness to soothe her baby, who was a poor sleeper and suffered from cholic.  In 1997, the World Intellectual Property Organization in Geneva, Switzerland, awarded her a gold medal for the discovery of the anti-allergic qualities of Rooibos team naming her "Woman Discoverer of the Year".

How to make a perfect cup of tea

Boil water.  Pour a little of the boiled water into a teapot, and swirl it around to warm the pot.  Pour the water out through the spout.

Place the tea (tea bag) into the pot and pour over the previously boiled water.

Allow to steep for two minutes and pour into the tea cup.

Add milk, sugar or honey as desired.

From the Good Earth and Mountains of the Cape of Good Hope - Caffeine free and low tannin.

RECIPES

 

South African Punch

  Rooibos tea (loose or bag)

  160 g Sugar

  1 litre Orange juice

  1 litre Apple juice

  3 cups Spring water

  1 litre Ginger ale

 

    * Prepare 1.2 litres of strong Rooibos tea

    * While tea is still hot, add sugar and stir until dissolved

    * Combine the remaining liquids

    * Garnish with mint leaves, cherries or apple and lemon slices

OIL  SCONES

2 cups flour

4 teaspoons Baking Powder

Pinch salt

1 tablespoon sugar

1/4 cup oil

1 egg

Sufficient milk & water to make 1 cup

Sift the dry ingredients together.  Mix together the liquids and add to the dry ingredients and mix to a soft dough.

Roll the dough out on a floured board (or push it out with your fingers) and cut out circles with a medium size cookie cutter.

Place on a greased baking sheet and brush the tops with oil or milk. Bake at 425ºF for 15 minutes.

Serve with jam (jelly) and cream.

AMBROSIA  FRUIT  SKEWERS

Ingredient for six

2 firm ripe peaches

1 firm ripe pear

3 kiwi fruit

1/2 pineapple

2 bananas

3 apricots

12 cherries, (canned or fresh)

For the Marinade

1/2 cup strong Rooibos tea

1/2 cup semi-sweet wine

1/4 cup honey

3 tablespoons brandy or any fruit-based liqueur

2 cloves

1 small cinnamon stick

3/4 teaspoon almond essence

2 teaspoons vanilla essence

To make the marinade, heat the tea, wine, honey, brandy (or liqueur) cloves and cinnamon until the honey has melted completely.  Leave to cool and then add the almond and vanilla essence.

Peel the peaches, pear, kiwi fruit, pineapple and bananas, and cut into 1 inch pieces of even size.  Halve and stone the apricots, and stone the cherries if necessary.

Thread the fruit in an attractive color sequence on to 6 wood skewers which have been soaked in water , dividing the fruit equally among the skewers.  Arrange the skewers in a shallow dish and pour over the strained marinade.  Cover and chill for 3 hours, turning from time to time.

Cut 6 pieces of heavy-duty aluminium foil large enough for each to contain one skewer completely.  Place the skewers in the centres of the foil pieces and spoon over marinade.  Seal the foil well.

Grill in a clamp grid until heated through (about 15 minutes) turning once.  If you do not have a clamp grid, carefully turn the foil packages with tongs, making sure not to pierce them.

To serve, open the foil packets over individual plates so that none of the marinade sauce is lost.  Sprinkle with grated coconut or flaked almonds and serve with cream or ice cream.
